Crossing the door of KALBAS, you are no longer in the center of Warsaw; you are in a bungalow by the beach, with the sunset behind the sea, and the sounds of Konpa, Zouk, Bachata, and bolero playing in the background. Bringing you the unique flavors of the traditional Caribbean cuisine in a modernized version with a European touch. We honor the food and culture with love, passion, and respect on every plate and in every glass we serve.

KALBAS is dedicated to represent the variety, rich flavors, and history of the Caribbean kitchen. With exotic roots, the restaurant also honors the seasonal and local products of Poland. Our chef, Yves Pierre, born and raised in Haiti, cooking since the age of 8 has a deep knowledge and understanding of Caribbean tastes. He received professional culinary training in France at L’Atelier des Chefs. The word KALBAS comes from Haitian Creole it is a name of a fruit of the calabash tree, commonly used in the Carribean as a serving plate, decoration, or even used to make music instruments.

The Caribbean cuisine is so much more than just food; it tells a story of the culture, history, and people. It is a perfect blend of Native Taino, African, European, and Latino influences. The beauty of the Caribbean kitchen is that, although having similar roots and using the same ingredients, each country has its distinctive dishes, like Haitian diri djon djon, Jamaican oxtail, Martinican/Guadeloupean poulet colombo, or Dominican sancocho. It is full of fresh fruits, vegetables, pulses, rice, fish and seafood, various types of meat, and tropical spices. The food is savory and soulful with unforgettable taste.

The idea of KALBAS was born a long time ago in the head of a young boy (Yves), helping his aunt at her restaurant Le Destin at Côte Plage 18, Carrefour, Haiti. At a very young age, he was responsible for taking care of the restaurant on his own. Moving to Europe, he never forgot his dream, the dream got only bigger, he continued cooking at home, for family and friends, big events, and restaurants in France. Knowing the Caribbean tastes wasn’t enough for him; he decided to deepen his culinary skills and knowledge at the French Chef’s school. His goal was to open his restaurant in France, but he fell in love with a Polish girl (his wife) and Poland. First visit to Poland in 2021 changed all. Since that time it becomes our common project to open the first Caribbean restaurant in Warsaw. After a lof of work, mastering the recipes, searching for authentic decorations and so much more, finally the beginning of 2026, we are proud to present to you KALBAS.
